When life gives you lemons.. have a bake-off

There are only so many gin and tonics one can garnish, so when the lemon trees at Arvida Te Puna Waiora in Kerikeri produced a huge haul, residents came up with a considerably tastier solution: hold a Lemon Bake-Off.
The challenge was simple. Take the lemons growing around the retirement village, team up with a friend or neighbour, and turn them into something delicious. What followed was a Clubhouse table full of lemony creations.
There were cakes, slices, biscuits, muffins, tarts, desserts and even homemade limoncello.
The competition entries faced blind taste testing before the all-important winners were revealed – runner-up was Pam Jenkins with a lemon and gingernut based cheesecake, while Jan Mac took the top spot with a delicious lemon posset.
